Yummy ginger cake with lemon and honey


  • 175 g butter
  • 75 g of honey
  • Citronzest
  • 175 g of flour
  • 3.75 ml of ginger
  • 2 eggs

For the glaze:

  • A teaspoon of honey
  • Lemon juice from a lemon


  • Start by turning on the oven to 175°.
  • Then melt the butter in a saucepan.
  • When the butter is almost completely melted, you can add the honey and lemon zest and mix well.
  • Then let it cool and add the rest of the ingredients (flour, ginger, and eggs).
  • Grease a baking dish and pour in the mixture.
  • Then place the form in the oven for about 30 minutes.
  • While the cake is baking, you can make the icing. Start by pouring honey and lemon juice into a pan and put on medium heat. When both ingredients have warmed up a bit, the glaze is ready.
  • Prick the cake with a fork when it’s done to make some holes, then pour the frosting so that it runs down the holes in the cake.
  • The cake should absorb all the icing.

  • Gingerbread cookies (about 20 pcs.)
  • 75 g of butter
  • 200 g cream cheese
  • 3 teaspoons of liquid cream
  • 2 eggs
  • 50 g of sugar
  • 1 piece of fresh ginger
  • Strawberry jam


  • Start by making the bottom of the gingerbread cookies. Crumble the cookies until they are in small pieces, almost like powder.
  • Then you melt the butter. Then pour the butter on the cake crumbs and mix well.
  • Then cover a mold with removable sides with the mixture you just made. Pack the bottom as much as you can and make sure it is flat and even.
  • Then mix eggs, sugar, cream, and cream cheese in a bowl and beat well.
  • When everything is thoroughly mixed, grate the ginger and mix it in.
  • Then pour the mixture over the gingerbread base. Then bake in the oven at 160° for about 30 minutes.
  • Be careful not to bake for too long so that the cake burns. Check the cake every five minutes while it is in the oven to prevent this.
