Recipe for a lighter flan Napolitano

Flan Napolitano stands out because it is so soft and spongy. The airy texture also makes the dessert melt in your mouth and leaves you wanting more. Making this cake is actually much easier than you might think. You will see that this is a quick and delicious dessert that will surprise your whole family.

As for the nutritional content, flan is made with milk and eggs. In this recipe, we have also decided to use skimmed milk to ensure that the cake has a really low-calorie content.

It is therefore important to remember that although skimmed milk contains plenty of calcium and iodine, and has lactose and sugar in the same proportions as whole milk, it also loses vitamins A and D in the process of removing fat. If you want your flan to contain these vitamins, you should therefore use whole milk.

However, eggs are very nutritious. Among other things, they contain high-quality protein and monounsaturated fatty acids. In addition, they contain vitamins A, and B (B2, B3, B12, and folate), phosphorus, iodine, and selenium.

We have also chosen to use ricotta cheese instead of condensed milk and stevia instead of sugar to further reduce the calorie content and make a dessert that is also suitable for diabetics.

Ingredients for Flan Napolitano for 10 people

  • 6 dl skimmed milk
  • about 3.5 dl ricotta
  • 5 eggs
  • 1 tablespoon stevia powder
  • 2 tbsp vanilla extract
  • vegetable oil for frying (just enough)

Ingredients for caramel

  • 50 g sucralose powder
  • 3 tbsp water
  • a little lemon juice

Make flan Napolitano like this

  1. Turn on the oven to 180 degrees.
  2. Whisk together the skimmed milk, ricotta cheese, and stevia with an electric whisk.
  3. Once you have a smooth mixture, add the vanilla extract and beat again. Then set aside.
  4. Prepare the caramel. To do this, place a heavy-bottomed saucepan on the stove over low heat and pour in the sucralose. Stir gently until the color becomes a sandy tone. Turn off the stove and add water and lemon juice. Stir constantly.
  5. Spray the flan pan or pans with vegetable oil.
  6. Pour the caramel into the mold and then spread the flan Napolitano mixture over it.
  7. Cover the form with aluminum foil and prepare a water bath in the oven. Pour water into a tray until it reaches up to 1/3 of the flan form that you place on the tray.
  8. Bake for about an hour at 180 degrees. Make sure the water does not evaporate. If so, add more water.
  9. Test the flank cake with a skewer. Your flan Napolitano is ready when it is no longer sticky in the middle.
  10. Allow the cake to cool so that you can easily remove it from the mold.

Some tips

  • You can use almond milk instead of skimmed milk (in the same amount).
  • You can also decorate your flan Napolitano with different kinds of fruit and berries: for example strawberries, cherries, or a mixture of berries. Take what you like!
  • If you enjoy dulce de Leche, drizzle a tablespoon of this over your flan!
  • You can also replace the ricotta cheese with condensed milk. But then be aware that the total amount of calories increases because condensed milk contains a lot of sugar.
